Valentine's Day Cookies

Sweet treats such as chocolate and baked goods are commonly associated with Valentine’s Day. They are exchanged between friends, family members, and loved ones as gifts. But who would want to sit around and wait for someone to bring them cookies for example, when they can be made easily at home? Here is a healthier take on to the common chocolate chip cookie, and the good news is that you’re not obliged to share ☺
Ingredients:
• 200g ground almonds
• ½ teaspoon baking powder
• 2 tablespoons coconut oil
• 1 tablespoon honey
• 1 teaspoon cinnamon
• ½ a mashed banana
• Chocolate chunks
• Pinch of salt
The first step is to preheat your oven to 170oC and mash ½ a banana with a fork. Chop up some chocolate of your choosing (or you can use ready made chocolate chips) and then put the ground almonds and ½ a teaspoon of baking powder in a mixing bowl. Place a saucepan on a high heat and add 2 heaped tablespoons of coconut oil; once it is melted you can add a teaspoon of cinnamon and a tablespoon of honey; stir everything together and reduce the heat.
Pour the coconut oil mixture onto the ground almonds as well as adding the banana and chocolate pieces. Start mixing the ingredients until everything starts to come together like a dough. At this point, line a baking tray with grease proof paper and spoon the cookie dough on to the tray while leaving some space between each cookie. Finally, place the tray in the oven and let the cookies bake for 15 minutes (or until they turn golden brown).
Once they are done, take them out and leave them to cool; this is the most challenging part because all you’d want to do is take a large bite out of one.
After having cooled down enough, the cookies would be ready to eat (finally). You can definitely share them, but you won’t be judged if it isn’t your sort of thing. Enjoy!
